The
culture of grilled beef started after World War II grilling
Tripe.
It used to be grllied with everything and sold on the
Black Market.
The current style of grilled beef, which is serving meat
and vegetables as single items, was done by a small restaurant
in Osaka. This style of grilled beef became sophisticated
after Kalbi and smoke-free roasters emerged as commercial
products. Because of the smell and grease, it was forbidden
to use white walls, but that has changed as well.
By listening to customer’s needs the grilled beef industry
changed its form by trying to satisfy customer needs.
